The 10oz filet was cooked perfectly. I could not have done better at home and I take my steaks seriously. Black Canyon actually knows what medium rare means and executes it without hedging. The steak arrived at the right temperature, with the right crust, and the right internal color. In a city where ordering a steak is sometimes a gamble, Black Canyon removes the uncertainty.
